I know we already have a Halloween blog but I kinda wanted to start a different page to kind of take it in a different direction.
It's probably not needed, but I am doing it anyway. After all, this is '11 and a new year. Plus, I am separated from everyone else this year. So this could be a good way I could update a Halloween page and have you guys read it or help out.
PUMPKIN RECIPES
Pumpkin Pancakes
Ingredients
- 1 1/2 cups milk
- 1 cup pumpkin puree
- 1 egg
- 2 tbsp vegetable oil
- 2 tbsp vinegar
- 2 cups all-purpose flour
- 2 tbsp brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground all-spice
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
Directions
I.) In a bowl, mix together the milk, pumpkin, egg, oil, and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
II.) Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle/pan, using approx. 1/4 measuring cup. Brown on both sides and serve hot.
Pumpkin Spice Bread
Ingredients
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, lightly beaten
- 1 (16 oz) can solid pack pumpkin
- 3 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp baking powder
- 1/2 tsp ground cloves
- 1/2 tsp ground allspice
- 1/2 cup water
Directions
I.) In a large bowl, combine sugar, oil and eggs. Add pumpkin and mix well.
II.) Combine dry ingredients; add to the pumpkin mixture alternately with water.
III.) Pour into two greased 9x5x3"-loaf pans. Bake at 350*F for 60-65 min, or until bread tests done.
IV.) Cool in pans 10 min before removal. Cool completely on wire rack.
Pumpkin Chocolate Chip Cookies
Ingredients
- 1 canned pumpkin
- 1 cup white sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp milk
- 1 tsp vanilla extract
- 2 cups semi-sweet chocolate chips
Directions
I.) Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
II.) Add vanilla and chocolate chips.
III.) Drop by spoonful on greased cookie sheet and bake at 350*F for approximately 10 min, or until lightly brown and firm.
Pumpkin Pie
Ingredients
- 1 (15 oz) can pumpkin
- 1 (14 oz) can sweetened condensed milk
- 2 large eggs
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 (9in) unbaked pie crust
Directions
I.) Preheat oven to 425*F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt into medium bowl until smooth. Pour into crust. Bake 15 min.
II.) Reduce oven temp to 350*F and continue baking 35-40 min, or until knife inserted 1" from the crust comes out clean. Serve at room temp or chilled. Garnish as desired.
Pumpkin Cake Roll
Ingredients
- 3 eggs
- 1 cup white sugar
- 2/3 cup canned pumpkin
- 3/4 cup all purpose flour
- 1/2 tsp ground cinnamon
- 1 tsp baking soda
- Confectioners' sugar for dusting
- 1 cup confectioners' sugar
- 3/4 tsp vanilla extract
- 2 tbsp butter, softened
- 8 oz cream cheese
Directions
I.) Preheat oven to 375*F. Grease 15x10x1" baking pan and line with parchment paper. Grease and flour the paper.
II.) In a large bowl, beat eggs on high for 5 min. Gradually add white sugar and pumpkin. Add flour, cinnamon and baking soda. Spread butter evenly in pan.
III.) Bake at 375*F for 15 min or until cake springs back when lightly touched. Immediately turn out onto a linen towel dusted with confectioners' sugar. Peel off paper and roll cake up in the towel, starting with the short end. Cool.
IV.) Make filling: mix confectioners' sugar, vanilla, butter (or margarine), and cream cheese together till smooth.
Pumpkin Fudge
Ingredients
- 3 cups sugar
- 1 cup milk
- 3 tbsp light corn syrup
- 1/2 cup pumpkin
- dash o' salt
- 1/2 tsp cinnamon
- 1/2 tsp allspice
- 4 tbsp margarine
- 1 tsp vanilla
Directions
I.) Combine milk, sugar, corn syrup, pumpkin and salt in large pan.
II.) Cook over medium heat until boiling, stirring constantly.
III.) When mixture comes to a full boil, reduce heat and summer until mixture comes to the "softball stage".
IV.) Remove from heat.
V.) Beat in cinnamon, allspice, margarine, and vanilla.
VI.) Cool, then beat until thick and mixture looses its gloss.
VII.) Spoon into buttered dish.
Harry Potter's Pumpkin Milkshake
Ingredients
- 1 frozen banana
- 3 tbsp orange juice concentrate
- 3 tbsp pumpkin puree
- 1 scoop vanilla ice cream
- 1/3 cup water
Directions
I.) Cut up frozen banana
II.) Put all ingredients into a blender
III.) Blend on high until smooth
IV.) Pour into two tall glasses and serve
[suggested]: Top the shake with whipped cream and a shake or two of cinnamon.
Pumpkin French Toast
Ingredients
- 4 eggs
- 1/4 cup canned pumpkin puree
- 1 tsp ground cinnamon
- 1 pinch ground nutmeg
- 8 slices whole wheat bread
- 2 tsp butter
Directions
I.) Beat the eggs, pumpkin puree, cinnamon and nutmeg together in a bowl. Dip the bread slices into the pumpkin mixture until coated on both sides.
II.) Melt 1 tsp of butter on a large skillet over medium-high heat. Place 4 slices of bread onto the skillet and cook until browned on both sides (about 3min/side). Repeat with remaining bread and butter.
